BAKED APPLE WEDGES 
1 tbsp. butter, softened
1 c. all-purpose flour
1 tsp. baking powder
1/4 tsp. salt
2 eggs
1/4 tsp. orange extract (optional)
1 c. sugar
2 med. baking apples, chopped finely
2 c. Rome or Granny apples
1/2 c. pecans, chopped

Grease a 9 inch pie plate with 1 tablespoon butter. In a small bowl, combine flour, baking powder and salt. In a large mixing bowl, beat the eggs and orange extract by hand until foamy. Stir in the sugar. Add the flour mixture, stirring well. Mixture will be stiff. Stir in apples and pecans. Spread in a greased plate. Bake at 325 degrees for about 50 minutes. Serve warm.
