POACHED PEAR OR APPLE WITH BRIE
BAKE
 
1/3 cup honey
1/3 cup bourbon
1/4 cup water (or less)
2 cinnamon sticks
1 pear or apple, peeled, cored, segmented into 8ths
1 wheel of brie, segmented into 8ths
sliced almonds

In a medium saucepan combine honey, bourbon, water and cinnamon over medium heat until honey melts. Add fruit, cover and heat to a brief boil. Reduce heat, uncover and simmer about 15 minutes; occasionally flip and stir fruit, keeping cinnamon in mixture.

Preheat oven to 350°F.

Place segmented brie into 6-inch round casserole baking dish. When fruit is medium tender, place in between brie segments and cover with a layer of sliced almonds. Increase heat under saucepan until mixture thickens to preference then pour over brie, fruit and almonds.

Bake in 350°F oven for 15 to 20 minutes then broil briefly to toast almonds. Remove from oven, cool to set.

Serve with crackers or bread as preferred.
