BAKED APPLE RABBIT 
1 rabbit
3 large apples (sliced thick)
1/2 teaspoon black pepper
3 strips bacon
pinch of rosemary
pinch of sage
1 leek

Quarter Rabbit put in deep cooking sheet or better yet cast iron deep skillet. Add pepper, herbs and leeks. Cover with bacon strips. Place apple slices over all the meat, cover loosely with foil and bake 350°F for 1 1/2 to 2 hours.

I had never cooked rabbit before tonight. My husband is a very pickey eater. I bought 2 rabbits at the market and tried to find family or friends to try it with us but no one would. I found this recipe and decided to give it it try. VERY EASY AND VERY DELICIOUS !!! Great way to start the fall season. We will make this again.

Modified the recipe as follows: heated a few pieces of bacon in the cast iron skillet to generate some grease, dredged the rabbit pieces in flour, and browned them in the bacon grease before following the rest of the recipe... by accident, we pre-heated the oven to 450°F instead of 350°F so we compensated by decreasing the cooking time to 1 hour; unexpectedly, the thighs (bone-in) were a little tough, while the tenderloins and back straps remained really tender. The saltiness of the bacon and the sweetness of the apple compliment the delicate gamey flavor of the rabbit perfectly. We served it with Uncle Ben's long grain wild rice and a simple salad, all of which went together perfectly. An easy 5-star recipe that we will make again.

I wanted something other than ye ole rabbit stew. This was a super easy recipe that took no time to prep. Turned out wonderfully! Will definitely make again!
