BAKED STUFFED POTATOES 
Baked potatoes as required

When potatoes are baked, cut top third off and scoop out the meat into a large bowl. Mash the potatoes as normal, adding butter, salt, pepper and milk. Add grated onion and grated sharp cheddar cheese. Fill empty skins. Sprinkle tops with more cheddar. Place in a shallow pan and bake at 350 degrees until cheese is melted.

NOTE: These can be done ahead to the point of rebaking. Bake just before serving.
