GOLDEN STUFFED BAKED POTATOES 
4 baked potatoes
1 c. grated raw carrots
1/4 c. chopped fresh parsley
1/4 c. minced onion or chives
1/2 tsp. horseradish
2/3 c. plain yogurt or sour cream
1/4 c. melted butter
Salt and pepper to taste
Grated Parmesan or cheddar cheese
Paprika

Halve baked potatoes and scoop out pulp. Whip pulp with carrots, parsley, chives, horseradish, yogurt, and butter. Season to taste with salt and pepper. Refill potato halves. Top with grated cheese and paprika. Bake at 350 degrees for 15 minutes, or until cheese melts and mixture is hot.

If desired, filled potato halves can be refrigerated. When ready to serve, remove from refrigerator and top with cheese and paprika. Bake at 350 degrees for 20-25 minutes or until hot.
