SLICED LEMON PIE 
Pastry for 2 crust pie
1 3/4 c. sugar
1/2 c. flour
1/4 tsp. salt
1 1/4 c. boiling water
Grated peel of 1 lemon
3 sm. lemons
Drop of lemon food coloring (opt.)
2 tbsp. butter

Mix sugar, flour and salt. Add water and beat until smooth. Add grated peel. Cut peel and white membrane from lemons and slice paper thin, discarding seeds (there should be about 2/3 cup slices). Stir into flour mixture. Stir in coloring. Line 9" pie pan with 1/2 pastry. Pour in filling, dot with butter and adjust top crust. Make a few slits in top and sprinkle with 1 tablespoon sugar. Bake in preheated oven at 375 degrees for 45 minutes. Serve slightly warm topped with ice cream. Makes 6 to 8 servings. NOTE: Filling is very soft.
