SLICE O'LEMON PIE 
Pastry for 2 crust pie
1 1/4 c. sugar
2 tbsp. flour
1/8 tsp. salt
1/4 c. soft butter
3 eggs
1 tsp. lemon rind
1 med. lemon
1/2 c. water

Combine sugar, flour and salt.. Blend in butter and mix thoroughly. Add eggs, well beaten (reserve 1 teaspoon egg white for crust). Blend until smooth. Grate lemon rind and then peel the lemon. Cut peeled lemon into paper-thin slices. Add water, lemon rind and slices to sugar mixture, blend well.

Pour into unbaked pastry. Top with pastry. Spread the teaspoon of egg white over top crust and sprinkle with mixture of sugar and cinnamon. Bake at 400 degrees for 35 minutes.
