PORK ROAST 
4 lb. pork (rib, loin or rolled shoulder)
2 tsp. cumin
6 small cloves garlic (crushed)
1/2 tsp. pepper
1/2 tsp. salt
pineapple rind or several slices canned pineapple

Soy Sauce Mixture:

4 tbsp. soy sauce
1/2 c. vinegar
6 tbsp. brown sugar
6 tbsp. chopped parsley

Combine cumin, garlic, salt and pepper and rub well into meat. Place a pineapple rind (or several slices of canned pineapple) on top of roast.

Bake at 350°F for 40 minutes per pound. Baste meat with 3-4 Tbsp. soy sauce mixture.

Bake 10-15 minutes. Baste and bake 3 more times. Remove roast to platter. Pour remaining sauce in baking pan and heat with drippings. If too much fat, remove it. Serve as gravy. Garnish with fresh pineapple and serve with rice.
