JALAPENO CORNBREAD 
3 c. cornbread mix
2 1/2 c. sweet milk
1/2 c. salad oil
3 eggs, beaten
3 tbsp. sugar
1 onion, grated
1 sm. can Niblet corn, drained
3 jalapeno peppers
1 1/2 c. grated cheese

Mix ingredients in the order given. Bake in greased and floured pans at 425 degrees for about 25 minutes. Better if real brown and thin. (Do not handle pepper with hands.)

Number of servings: 18.
