BROILED BACON MUSHROOM CHICKEN
KABOBS
 
2 whole lg. chicken breasts, boned, skinned and pounded
1/4 lb. med. mushrooms
3 green onions, cut into 2 inch pieces
1/2 c. orange marmalade
1/4 c. soy sauce
2 tbsp. honey
1/2 tsp. ground ginger
1 garlic clove, pressed
Salt and pepper
1/2 lb. bacon

Cut each chicken breast in bite size chunks. In medium bowl, mix chicken, mushrooms, green onions. Add the mixture of marmalade, soy sauce, honey, ground ginger, salt, pepper and garlic. Mix together. Set aside.

(Can marinate an hour or more prior to cooking.)

Broil bacon slices 4 minutes or until partially cooked, turned once.

Cut each bacon slice crosswise in half. Wrap each piece of chicken with a piece of bacon. On skewers, thread bacon-wrapped chicken pieces, mushrooms, and green onions. Arrange on broiling pan. Pour marmalade mixture into small saucepan, over high heat. Heat to boiling. Cook 6-8 minutes. Stir constantly until mixture is thick and reduced in volume by half.

Broil kabobs 15 minutes or until chicken is tender. Brush with marmalade, turning kabobs occasionally. 4 servings.
