CHICKEN AND CANADIAN BACON 
1/4 lb. Canadian bacon
4 slices thin bacon
4 boneless skinless chicken breasts or thighs
1/4 teaspoon garlic powder
1 can cream of chicken or mushroom soup
1/2 cup sour cream, buttermilk or Ranch Dressing
4 oz. fresh or canned sliced mushrooms
2 tablespoons bread crumbs (optional)
paprika (optional)
2 tablespoons butter

Place Canadian bacon in greased baking dish. Sprinkle chicken with salt, pepper, and garlic powder, to season.

Add boneless chicken pieces wrapped in lean/thin bacon. Mix a can of cream of chicken or cream of mushroom soup with 1/2 cup sour cream, buttermilk or Ranch dressing.

Cover with sliced mushrooms and sprinkle with 2 tablespoons bread crumbs; dot with butter and sprinkle with paprika. Bake, covered, 30 minutes. Remove cover and bake for another 15 minutes or until chicken reads 160°F (breast).
