SUMMER SAUSAGE 
5 lbs. ground chuck
3 tsp. coarse ground pepper
1/4 tsp. hot red pepper
3 tsp. liquid smoke
4 tsp. mustard seed
3 tsp. garlic salt
5 tsp. tender quick
2 tsp. garlic powder

Mix spices and add ground chuck; knead well; refrigerate in covered bowl tightly for 4 days. Knead daily; on fourth day, roll in 4 loaves. Bake at 150 degrees 9-10 hours on broiler pan.
