SUE'S SUMMER SAUSAGE | |
2 lb. hamburger 2 tbsp. liquid smoke 1 c. water 3 tbsp. Morton's tender quick curing salt 1 tsp. cracked black pepper 1/4 tsp. onion salt 1/2 tsp. mustard seed Combine all ingredients and mix well. Shape into 2 or 3 rolls, 2 inches in diameter. Wrap snugly in aluminum foil with shiny side in. Refrigerate 24 hours, then poke holes in bottom side of foil roll. Place on broiler rack above a pan with 1/2 inch of water in it. Bake at 325 degrees for 90 minutes. Slice thinly for sandwiches, or for nibbling. Part can be frozen. Sooo good, better double recipe. |
