FRIED OYSTERS 
1 qt. oysters
2 egg whites
3 pinches salt
1/2 tsp. pepper
1 c. cracker meal

Drain oysters. Beat egg whites until frothy. Add salt and pepper. Dip oysters in egg whites and then roll in cracker crumbs, seasoned to taste. Immediately drop oysters into deep fat, 375 degrees, and fry until golden brown.
