CHEESE - CRANBERRY BREAD 
1 1/2 c. cranberries, cut in halves
1/2 c. sugar
2 c. flour
3/4 c. sugar
1 tbsp. baking powder
1/2 tsp. salt
2 tsp. grated orange peel
1/2 c. coarsely chopped walnuts
1 1/2 c. finely shredded sharp Cheddar cheese
1 egg, slightly beaten
1 c. milk
1/4 c. butter, melted and cooled

Mix cranberries and 1/2 cup sugar until well blended. Blend next four ingredients together in large bowl. Mix in the sugared cranberries, orange peel, nuts, and cheese. Beat the egg, milk and butter together. Add to mixture in bowl; stir just until dry ingredients are moistened (do not overmix). Butter bottom of loaf pan (9 1/2 x 5 1/4 x 2 3/4) and put batter in, being careful to spread batter evenly into corners. Bake at 350 degrees about one hour, or until a wooden pick inserted in center comes out clean. Remove from pan to cooling rack and cool completely before slicing. To store, wrap and refrigerate. This freezes very well. If preferred, this may be baked in two small loaf pans instead of one large one. Adjust cooking time for smaller loaves.
