CRANBERRY ORANGE BREAD 
2 c. flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 c. sugar
1 egg, beaten
1/2 c. orange juice
Grated rind of 1 orange
2 tbsp. melted butter
2 tbsp. hot water
1 c. raw whole cranberries
1 c. coarsely chopped walnuts

Combine flour, baking powder, soda, salt and sugar in large mixing bowl; set aside. Mix beaten egg with orange juice, rind, butter and hot water. Fold flour mixture into egg mixture until blended. Do not beat. Gently fold in cranberries in walnuts. Spoon into greased 9x6 inch loaf pan or smaller pans of choice. Bake at 325 for 60 minutes; test in center with wooden pick. Cool on rack 15 minutes before removing from pans.
