CHICKEN BREAST SCAMPI | |
2 to 3 lbs. boneless chicken breasts 1/2 lb. butter 2 whole scallions, chopped 1 tbsp. parsley, chopped 1/2 tsp. fresh dill 1/2 tbsp. oregano 1/2 tsp. salt 1/2 tsp. pepper 3 cloves garlic, minced Cut raw chicken into 2 ounce chunks (like huge shrimp). Place in 9 x 13 inch baking dish. Melt butter in saucepan, add salt, pepper, garlic, scallions, dill, parsley and oregano. Cook 2 minutes over low heat. Pour mixture over chicken. Bake at 350 degrees for 10 minutes. Separate chicken, cook another 15 minutes and then broil for 4 to 5 minutes. Half chicken and 1/2 shrimp may be used. Serve with linguini or rice. |
