CHICKEN/SHRIMP SCAMPI 
2-3 lbs. boneless chicken, cut into lg. shrimp like size pieces
or 2 (6 oz.) pkgs. frozen shrimp
1/2 lb. butter
4 cloves garlic, minced
1/2 med. onion, minced
1 tbsp. parsley
1/4 tbsp. dried dill
1/2 tsp. salt
1/2 tsp. pepper
1/2 tbsp. oregano

Microwave butter, garlic, onions, parsley, dill, oregano, salt and pepper. Put chicken or shrimp in casserole dish and pour butter/herb mixture on to. Bake for 10 minutes in 350 oven. Separate and bake another 10 minutes (or in microwave, cook on high for 4-5 minutes turning and separating). Serve over rice or spaghetti and garlic toast to absorb scampi sauce.

Since microwave ovens vary in power, you may need to adjust your cooking time.

This was so easy and delicious! I only used two dishes, the bowl to microwave and the casserole dish... I used 1 lb of thawed shrimp, 1 large chicken breast and about 1/4 lb bay scallops and refrigerated minced garlic to save time...My 2yr old even ate it! This is a keeper... Next time I'll make a bit more butter mixture... Thanks!!

This recipe is awesome. I'm allergic to shrimp, so I only use chicken breast. It's easy and my picky husband even likes it. I'd also use red and yellow peppers, but not his favorite.
