MANICOTTI FILLING 
2 c. Ricotta cheese
1 c. shredded Mozzarella cheese
1/4 c. grated cheese (Romano or Parmesan)
1 egg, beaten
1 tbsp. chopped, fresh parsley

TOPPING:

3 1/2 c. tomato puree
1/4 c. minced onion
1 clove garlic
1 tbsp. sugar

Combine cheeses, beaten egg and parsley. Spread small amount of filling down center of manicotti noodle and roll up. Place seam down in shallow 9"x13" baking dish.

For topping, simmer tomato puree, onion, garlic and sugar together for 45 minutes. Pour sauce over manicotti. Bake 30 minutes at 350 degrees.
