BASIC CAKE MIX 
Be sure to measure precise amounts of the mix for each portion. Using too much or too little of the mix in a cake recipe will affect the quality of the baked cake.

8 c. all-purpose flour
5 c. sugar
1/4 c. baking powder
1 tbsp. salt
2 c. shortening

Stir together flour, sugar, baking powder and salt. With pastry blender cut in shortening until mixture resembles very fine crumbs. Divide mix into five equal portions (about 19 ounces or 3 1/3 cups each). Place in airtight containers; label. Store in a cool, dry place up to six weeks. (Or, place in freezer containers; seal and freeze up to 6 months. To use, allow mix to come to room temperature.) Makes five 3 1/3 cup portions mix.
