FAT-FREE FRENCH FRIES 
3-4 long potatoes, scrubbed, sliced lengthwise into thick fries
1 tbsp. salt
1 tbsp. water

Place potatoes in a large bowl. Sprinkle with salt and water. Mix in bowl to coat. Place fries directly on oven rack and bake at 500 degrees for 20 to 25 minutes until puffy and golden brown. Serve immediately. It does make the oven rack a little messy. To prevent this, place potatoes on a cookie cooling rack and then on the oven rack.
