MEXICAN FRUIT CAKE 
2 c. self rising flour
2 c. sugar
2 eggs
1 (22 oz.) can crushed pineapple
1 c. chopped nuts

ICING:

1 (8 oz.) pkg. cream cheese
1 stick butter
1 tsp. vanilla
2 c. powdered sugar

Mix by hand. Mix flour and sugar. Add eggs, pineapple and nuts. Pour in greased and floured 13"x9" pan. Bake in preheated 350 degree oven for 35 to 40 minutes.
