PERFECT PANCAKES 
2 c. unsifted unbleached flour
2 heaping tbsp. cornmeal
1 tsp. baking soda
2 tsp. baking powder
2 heaping tbsp. sugar
1/4 tsp. salt
2 eggs
2 c. buttermilk
1/4 c. corn oil

Mix dry ingredients together in one bowl. Mix wet ingredients together in another bowl. Combine ingredients but do not over stir. Allow mixture to remain lumpy. Serves 4.
