SPINACH LOAF (WITH SAUCE) 
2 eggs, well beaten
2 c. cooked spinach
1 c. grated cheese
2 tbsp. bacon drippings
1 c. bread or cracker crumbs

Combine eggs, spinach, cheese, bacon drippings and crumbs. Season. Form into a loaf. Bake at 400 degrees for 30 minutes.

SAUCE:

3 slices bacon, diced
1 tbsp. chopped onion
2 tbsp. flour
1 1/2 c. cooked tomatoes (or juice)
1 tbsp. chopped green pepper (may be omitted)

Cook bacon; add onions; brown slightly. Add remaining ingredients. Stir until thick and season with salt and pepper, about 5 minutes.
