SPINACH STUFFED TURKEY MEATLOAF 
1 (10 oz.) pkg. frozen, chopped, thawed, drained spinach
1 c. chopped mushrooms
1/4 c. chopped onion
1/2 c. lite shredded Swiss cheese, divided
1/4 c. grated Parmesan cheese
1 lb. ground turkey (or hamburger)
3/4 c. uncooked oats
1/2 c. skim milk
1 egg, slightly beaten
1 tsp. Italian seasoning
1/2 tsp. salt
1/4 tsp. pepper

Bake at 375 degrees. Cook spinach, mushrooms and onion over low heat until onion is tender. Remove from heat and stir in 1/4 cup Swiss cheese and Parmesan. Combine remaining ingredients in separate bowl, except remaining Swiss cheese. Mix well. Spoon 2/3rds of meat mixture lengthwise down center of 11 x 7 inch pan. Make a deep indentation and fill with spinach mixture.

top with remaining meat mixture to encase spinach filling. Bake 30-35 minutes. Sprinkle on remaining cheese and return to oven 1-2 minutes until cheese is melted. Let stand 5 minutes before cutting. Serves 6 plus.
