SQUASH-PEPPER CASSEROLE 
2 tbsp. uncooked rice
2 yellow squash, sliced
1 zucchini squash, sliced
1 rib celery, sliced
1/2-1 green pepper, sliced
1 med. to lg. onion, sliced
2 tomatoes, sliced or 1 can tomato wedges, drained
2 tbsp. brown sugar
2 tbsp. butter or more to taste
1 1/2 tsp. salt
1/2-1 tsp. pepper to taste

Layer ingredients in order given in a 1 1/2 quart casserole. Bake at 350 degrees for 1 hour or until desired tenderness. Vegetables may be increased and larger casserole used. Rest of ingredients remain the same.
