SQUASH CASSEROLE 
2 c. cooked squash, mashed (use winter or butternut)
2 eggs
1 c. milk
2 tbsp. minced onion
1/2 stick melted butter
Salt & pepper to taste
1 c. bread crumbs

Mix squash, eggs, milk, onion, salt and pepper; pour into buttered casserole dish. Pour 1/2 of melted butter over bread crumbs and mix well. Spread buttered bread crumbs over squash mixture and drizzle remaining butter over casserole. Bake at 350 degrees for 25-35 minutes at 350 degrees.
