MEXICAN BRUNCH CASSEROLE 
2 cans whole roasted green chilies
2 c. chopped tomatoes
2 c. shredded cheddar
3/4 to 1 c. Bisquick
1 c. milk
3 eggs
1/2 tsp. salt
Sausage or chorizo (opt.)

Heat oven to 375 degrees. Grease an 8 x 8 x 2 inch baking dish. Remove stems and seeds from chilies, rinse chilies in water and arrange in single layer in baking dish. Top with chopped tomatoes. Sprinkle cheese on top. Beat remaining 4 ingredients. Pour over ingredients on baking dish. Bake uncovered 30 to 35 minutes until golden brown and knife inserted comes out clean.
