PINTO BEAN SURPRISE PIE 
1 c. cooked pinto beans
1 c. brown sugar, packed
1 c. granulated sugar
1/2 c. butter, softened
2 eggs
1 tsp. vanilla

Mash beans, but not too fine. Cream sugars, butter and eggs thoroughly. Add beans and vanilla. Pour into unbaked pastry shell. Bake in 350 degree oven, about 45 minutes. Taste like pecan pie.

To this recipe I added:

1/2 c. angel flake coconut
1 extra tsp. vanilla
