BOILED PINTO BEANS 
1 lb. pinto beans
2 sm. or 1 lg. ham hock
2 tbsp. onion flakes
1/4 tsp. red pepper flakes
1 tbsp. salt
1 tsp. black pepper

Wash beans. In pot cover with water. Bring to a boil for 3 minutes, covered. Turn off and allow to set for 1 hour. In another pot put ham hocks and other ingredients. Cover with water and cook. After the beans have set for 1 hour pour off water and put beans in pot with ham hocks. Let boil 2 to 3 hours or until done. If water boils down continue to add boiling water until beans are soft. Yields: 12 to 16 portions.

This is a very easy way to make beans, but even easier is to simply keep boiling without changing water if you are going to BOIL the beans. You must change water, etc., if you are going to put them in the crock-pot since it doesn't keep them boiling. DO NOT salt the beans until the last step, your beans will end up tough if you do. Otherwise, this works great to make good basic beans!
