BOILED PINTO BEANS | |
1 lb. pinto beans 2 sm. or 1 lg. ham hock 2 tbsp. onion flakes 1/4 tsp. red pepper flakes 1 tbsp. salt 1 tsp. black pepper Wash beans. In pot cover with water. Bring to a boil for 3 minutes, covered. Turn off and allow to set for 1 hour. In another pot put ham hocks and other ingredients. Cover with water and cook. After the beans have set for 1 hour pour off water and put beans in pot with ham hocks. Let boil 2 to 3 hours or until done. If water boils down continue to add boiling water until beans are soft. Yields: 12 to 16 portions. |
