PINNACLE PEAK BEANS (ARIZONA
STYLE)
 
1 lb. pinto or pink dry beans
8 c. water
1 lb. salt pork, cut in pieces or 2 ham hocks or 6 slices bacon, cut in pieces
1 lg. onion, chopped
6 beef bouillon cubes
1/2 c. boiling water
1/2 tsp. crushed oregano

Sort and wash beans, rinse then add water; let stand overnight. Cook in same water they have been soaked in. Add meat of your choice. Add bouillon, bring to a boil, then lower to simmer immediately. Check water during simmering. When done, add salt (1 to 2 teaspoons) and oregano to taste.
