ZUCCHINI BARS 
2 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. ground cloves
1/4 tsp. salt
2 eggs or 3 egg whites
1/2 c. vegetable oil
1/2 c. firmly packed brown sugar
1 c. buttermilk or plain low-fat yogurt
1 tsp. vanilla extract
1 1/2 c. shredded zucchini squash
2 tbsp. powdered sugar

Combine flour, baking powder, soda, cinnamon, cloves and salt in a bowl; set aside.

Combine eggs, oil, sugar, buttermilk and vanilla in a large bowl; beat well. Stir in zucchini; add flour mixture and stir until well blended. Pour batter into a greased 9x13 inch baking pan. Bake at 350 degrees for 30 minutes. Cool in pan; sprinkle with powdered sugar and cut into squares.
