PINTO BEANS 
1 lb. dried pinto beans
1/2 lb. ham hocks or salt pork, cut into cubes
5 cups water
1 medium onion, quartered
1 clove garlic, minced (optional)
1 tsp. chili powder
2 tsp. salt

Soak pinto beans overnight in water to cover; drain.

Combine beans, water, onion, garlic, chili powder, salt and ham hocks or salt pork in large pot. Bring to boiling; lower heat; simmer over low heat 2 1/2 hours, or until beans are very soft.

Remove ham hocks before serving.

I've been making pinto beans for a while now, and I have to say that this is my favorite recipe by far. The flavor of the beans just takes you on a journey back in time with its richness and depth. It's perfect for a Sunday afternoon meal! The ham hock adds so much flavor too.
