CHICKEN SALTIMBACCO 
3 whole chicken breasts 2 1/4 lbs.
6 thin slices of ham
6 thin slices of Swiss cheese
1 med. tomato, peeled and chopped
Dried sage, crushed
1/3 c. dry bread crumbs
2 tbsp. grated Parmesan cheese
2 tbsp. snipped parsley
1/4 c. butter, melted

Skin, halve lengthwise. Place between two pieces of plastic wrap, work from center to edge, pound lightly with mallet forming rectangle 1/8 inch thick. Remove plastic wrap, place ham slice and cheese slice on each cutlet, trim to fit within 1/4 inch of edge. Top with some tomato, sprinkle lightly with sage. Fold in sides, roll up jelly roll style, pressing to seal. Combine bread crumbs, Parmesan cheese and parsley. Dip chicken in melted butter, roll in crumbs. Bake in shallow pan. Remove to serving plate. Stir remaining mixture in pan until smooth spoon over chicken. Bake at 350 degrees for 40 to 45 minutes.
