1 lb. salmon fillets, very fresh 1/3 c. coarse sea salt 1/4 c. fresh lemon juice Green onion, thinly sliced Cut salmon in bite-size pieces and place in a non-metal bowl. Sprinkle the salmon with salt. Toss the fish with lemon juice and onion. Cover and refrigerate about 8 hours. |
