SMOKED SALMON FETTUCINI 
1 qt. (4 c.) cream or half & half
1/2 c. butter
3/4 c. smoked salmon, thinly sliced
1/4 c. minced chives
1 lb. fettucini, cooked
1 lemon
Parsley

Combine cream and butter in medium saucepan. Cook over medium heat, stirring regularly until thick, glossy and reduced by half. Add salmon, chives and pepper (to taste). Stir gently for 1 minute. Put fettucini on serving platter and pour the salmon cream sauce over. Garnish with parsley and lemon.
