CHICKEN-BROCCOLI PIE 
1 (10 oz.) pkg. frozen chopped broccoli
3 c. shredded Cheddar cheese
1 1/2 c. cut-up cooked chicken
2/3 c. chopped onion
1 1/3 c. milk
3 eggs
3/4 c. Bisquick
3/4 tsp. salt
1/4 tsp. pepper

Heat oven to 400 degrees. Grease small 1 quart casserole. Rinse broccoli under cold water to thaw, drain. Mix broccoli, 2 cups of the cheese, chicken and onion together in dish. Beat milk, eggs, baking mix, salt and pepper until smooth. Pour into dish. Bake until knife comes out clean, 25 to 35 minutes.

Top with remaining cheese and bake 1 to 2 minutes longer. Cool 5 minutes. Recipe can be doubled.
