IMPOSSIBLE CHICKEN AND BROCCOLI PIE | |
1 pkg. (10 oz.) frozen chopped broccoli 2 c. shredded Cheddar cheese (8 oz.) 1 1/2 c. cut up cooked chicken 2/3 c. chopped onion 1 1/3 c. milk 3 eggs 3/4 c. Bisquick 1/2 tsp. salt 1/4 tsp. pepper Grease pie plate 10 x 1/2 inch. Rinse broccoli in cold water to thaw, then drain. Mix broccoli, 1 1/3 cups cheese, chicken and onion in pie plate. Beat milk, eggs, Bisquick, salt and pepper 15 seconds in blender on high speed, 1 minute with wire whisk or hand beater or until smooth. Pour into pie plate. Bake 30 to 35 minutes (at 400 degrees) or until knife inserted in center comes out clean. Top with remaining cheese. Bake 1 to 2 minutes longer or just until cheese is melted. Cool 5 minutes. Half Recipe: Use 1 quart square or round casserole. Decrease eggs to 2 and Bisquick to 1/2 cup. Divide remaining ingredients in half. Decrease beat time to 10 second in blender or 30 seconds with whisk or hand beater. For meatless variation, use 2 packages (10 ounces each) frozen chopped broccoli and omit chicken. |
