PASTA SAUCE WITH MEAT AND
MUSHROOMS
 
1 lb. hot Italian sausage links, cut into 1/2 inch pieces
2 tbsp. vegetable oil
1 lb. mushrooms, sliced
2 cloves garlic, minced
1 lg. onion or 2 med. onions, coarsely chopped
1 lb. ground beef, round or chuck
2 tsp. salt
1/4 tsp. pepper
1/2 tsp. basil
1 tbsp. oregano
1 tsp. fennel
1 tbsp. chopped parsley
2 (6 oz.) cans tomato paste
3 c. water

1. Brown sausage in oil. Remove from pan. Drain on paper towels. Pour off all but 2 tablespoons of fat.

2. Saute mushrooms in the fat. Remove with slotted spoon. Set aside.

3. Cook garlic and onions in same pan, until onions are soft.

4. Add ground beef. Cook until well browned. Pour off excess fat.

5. Stir in seasonings, tomato paste, and water.

6. Add mushrooms and sausage. Simmer 30 minutes, stirring often. Correct seasonings. Serves 4-6.
