PASTA AND MEAT SAUCE 
olive oil
6 sweet Italian sausages
1 lb. ground beef
1 cup diced onions
3 (12 oz. ea.) cans Italian plum tomatoes
1 cup tomato paste
1/2 cup red wine
1 1/2 cups diced onions
1 cup parsley (fresh)
1 1/2 tsp. oregano
pinch of sugar
grated zest of 2 lemons
salt and pepper to taste

Add olive oil to skillet. Add sausage and ground beef. Transfer to casserole.

Drain fat and add onions and garlic. Cook for 5 minutes on medium heat. Add to casserole.

To casserole add tomatoes, tomato paste, red wine, parsley, olive oil, oregano, pepper, salt, sugar and half lemon zest.

Bring mixture to boil, then reduce heat. Cover and simmer for 2 1/2 hours. Stir occasionally so sauce does not stick.

Add more garlic, 1/2 cup parsley and rest of lemon zest.

Stir well and cook, uncovered for 1 more hour.

Adjust seasoning to taste.

Serve over your favorite pasta.
