HUCKLEBERRY MARMALADE | |
1 orange 4 c. huckleberries 1 pkg. powdered pectin 2 c. water 1 lemon 5 1/2 c. sugar Wash and quarter orange and lemon. Remove seeds; slice into paper thin slices. Simmer in water 30 minutes. Crush berries and add to citrus fruits. Add pectin; stir until mixture reaches full rolling boil. Add sugar. Boil 1 minute. Remove from heat and skim. Cool 5 minutes, stirring occasionally. Pour into hot sterilized jars and seal. Makes 3 pints. |
