KUMQUAT MARMALADE | |
12 firm kumquats Slice off ends and push through pulp; complete slicing. Add water to show through, but not cover. Let stand 1 hour. Bring to a boil and simmer 30 minutes. Remove from fire and add: 1 c. orange pulp (discard skin) 2 tbsp. lemon juice (or calimondon) Simmer 10 minutes longer. Remove from fire and measure. Add as much sugar and cook slowly until it drips from spoon and gels easily. Do not overcook; scorches easily. |
