1 doz. lemons (smooth, thin skinned)
1 1/2 lb. sugar for each 1 lb. fruit & water mixture
Cut lemons into very thin sliced. Save the seeds. Weigh fruit, add 1 pint of water for each 1 pound of fruit. Let mixture set overnight. In morning, bring to a gentle boil, let cook until fruit is tender. Set aside until cool. Weigh fruit and water mixture, add sugar according to ingredient's instructions. Place seeds in cloth bag, cook with fruit until mixture is thick and transparent. Remove seeds, fill prepared jelly jars, seal when cool.
