MEXICAN CORNBREAD 
1 1/2 c. cornmeal (self rising)
2 eggs
1/2 c. onion
1 c. milk (sweet or buttermilk)
3/4 c. grated cheese
1/2 c. cooking oil
1 tsp. sugar
1/8 tsp. salt
1/2 c. creamed corn
Chopped jalapenos, to taste

Mix all ingredients well. Bake in a greased pan at 350 degree oven until golden brown. Up to 1 hour, time varies.
