TERESA'S MEXICAN CORNBREAD 
1 1/2 c. self rising meal, yellow or white
1 can whole kernel corn, drained
1/2 c. oil
1/2 c. sweet milk
1 onion, chopped
2 oz. can chopped jalapeno peppers
3 eggs
1 c. grated cheddar cheese
1 tbsp. mayonnaise

Mix ingredients and put in a greased loaf pan. Bake for 45 minutes at 350 degrees. If white cornmeal is used, a few drops of yellow food coloring may be added to obtain yellow color.
