MEXICAN CORNBREAD CASSEROLE 
1 lb. ground beef
1/4 c. chopped onion
2 tbsp. minced jalapeno
2 eggs, beaten
15 1/2 oz. pkg. cornbread mix
2 c. cream corn
2/3 c. milk
4 slices American cheese

preheat oven to 425 degrees. Brown ground meat, until crumbly, drain fat, onion, jalapenos and set aside. Combine eggs and 1 cup corn and milk and mix cornbread mix. Stir just until moistened, pour half of batter into greased 9"x9" pan. Top with beef mixture and cheese slices and remaining half of batter on top and bake for 25 to 30 minutes.
