FRIED SMELTS 
Vegetable oil
1 lb. smelts
Flour
1 c. milk
Salt
Sprigs of parsley
2 lemons

In deep fryer, heat oil to 375 degrees. Pat smelts dry with paper towel. Dip smelts in milk. Dredge with flour; shake off excess flour. Drop smelts into deep fryer and cook until golden. Let stand to drain on paper towel and season with salt. Place smelts in a serving dish; garnish with parsley and lemon wedges.
