CORN PUDDING | |
2 c. canned or fresh corn 2 tbsp. flour 1 tsp. salt 3 tbsp. butter 3 eggs 2 tbsp. sugar 1 3/4 c. milk Blend butter, sugar, flour and salt. Add eggs, beating well and stir in corn and milk. Pour ingredients into buttered casserole and bake 45 minutes at 325 degrees. Stir once, halfway through cooking. When done, the pudding will be golden brown and silver knife inserted will come out clear. (This mixture can be prepared ahead of time and kept in a jar in refrigerator. Shake well and pour into baking dish.) |
