COUNTRY CORN PUDDING 
1 can kernel corn, drained
1 can cream corn
1 pkg. Jiffy corn muffin mix
2 eggs, slightly beaten
1/2 stick butter
2 tbsp. chopped green pepper
1 sm. onion, chopped
2 c. Cheddar cheese, grated
1/4 c. sour cream

Melt butter, saute onions and green pepper until soft. Mix drained, corn, cream corn, egg, muffin mix and onions and green pepper. Put in greased 9x12 inch baking dish and top with the grated cheese and sour cream. Bake at 350 degrees for 30 to 40 minutes.
