OATMEAL FRUIT COOKIES FOR DIABETICS | |
1 c. sifted flour 1 tsp. baking soda 1 c. water 1/2 c. chopped pitted dates 1/2 c. chopped peeled apples 1/2 c. raisins 1/2 c. butter 1 c. quick cooking oats 2 eggs, beaten 1 tsp. vanilla 3/4 c. chopped nuts Sift together flour, baking soda and set aside. In 2-quart saucepan over medium-high heat, bring water, dates, apples, and raisins to a boil. Reduce heat to low; simmer 3 minutes. Remove from heat; stir in butter until melted. Pour into large bowl; cool slightly. Stir in dry ingredients, oats, beaten eggs, vanilla and chopped nuts until well blended. Cover and refrigerate overnight. Drop by teaspoonfuls 2 inches apart on greased baking sheet. Bake in 350 degree oven 12-14 minutes. Cool and store in air-tight container and refrigerate. Makes 40 cookies. Per cookie: 70 calories; 1 g protein; 7 g carbohydrates; 4 g fat; 14 mg cholesterol; 51 mg sodium. |
